As we've discussed before, we've got a soft spot for the under-appreciated daiquiri - and really all rum for that matter. Somewhere along the way, daiquiris went from being a simple recipe of rum, lime and sugar to a brightly-colored beach drink. Now, we know there's an audience for those sugary-sweet blended beverages...probably the same audience that watches Wheel of Fortune clapping while they blurt our guesses.
We have a feeling that this fresh peach daiquiri will please both audiences - those looking to reclaim the classic daiquiri and those who enjoy a little something sweet every now and then.
2.5 oz white rum
1/2 fresh peach
.5 oz simple syrup
.5 oz peach liqueur
.5 oz fresh lime juice
.5 oz fresh orange juice
2 dashes peach bitters (orange or lemon bitters will also do)
fresh peach and lime for garnish
Cut the half a peach into chunks, place in cocktail shaker and muddle until mashed to smithereens. Add all other ingredients (except the garnish of course) and fill with ice. Shake the living hell out of this thing for 30-45 seconds. Strain cocktail into a chilled glass and garnish with fresh peach and lime.
