The Envy Apple Cocktail

One of our partners for our September 3st of the Month event, Angel's Envy Bourbon is a total blast to make cocktails with. While it's delicious enough to drink neat, the complexity added from finishing the spirit in Port Wine barrels makes it deliciously-mixable.

For this cocktail, we've made a simple apple syrup. Easy to make at home you start with 2 cups of apple juice. We juiced our own organic fuji apples, but you could indeed purchase apple juice. Obviously, the better the juice, the better the syrup. We then added 1 oz of lime juice to the 2 cups of apple juice and placed in a stockpot over high heat. Boiling away the water, we reduced the 2 cups down to just 1/2 cup. This syrup will keep refrigerated for two weeks...but we're guessing it won't last nearly that long.

For added complexity, we also added a little lemon bitters an Averna Amaro. We tested it with other bitter aperitifs, but this was our favorite by far.

equipment:

cocktail mixing glass
bar spoon
cocktail strainer
rocks glass

ingredients:

2 oz Angel's Envy Bourbon
1 oz Averna Amaro
.75 oz apple syrup
1 dash lemon bitters
strip of lemon zest for garnish


method:

Fill cocktail mixing glass with ice and add bourbon, amaro, apple syrup and bitters. Stir to chill and strain into rocks glass with an ice sphere (or a couple ice cubes). Express oils from lemon zest over cocktail and drop into glass to garnish.
