A simple cardamom syrup (recipe below) is all it takes to bring out the subtleties of a good dark rum. Probably the most neglected spirit, poor little rum never seems to get any love. But we love it. Be it in a classic Daiquiri or in this spin on that old favorite, the natural sweetness of rum is just plain friggin' delicious.
Start with your cardamom syrup by bringing one cup of water to boil with 1/2 teaspoon of ground cardamom. Let simmer for a minute or two before adding one cup of sugar and stirring to dissolve. Strain through a coffee filter and chill before use.
Now go grab some good dark rum. We used Goslings Black Seal Black Rum for this one.
.5 oz lime juice
.5 oz cardamom syrup
2.5 oz Goslings Black Rum
3 oz seltzer
lime wedge for garnish
In a cocktail shaker, add lime, syrup and rum over a few ice cubes. Shake to chill and add seltzer. Stir lightly with bar spoon before transferring cocktail to glass. Garnish with lime wedge and drink up!
